Mason Jar BBQ Sauce

We just made a couple pans of barbecue ribs using this great beer barbecue recipe.

And of course all the extra barbecue sauce made it into these half pint mason jars.

  • 1 diced onion

  • 4 cloves minced garlic

  • 1 cup beer

  • 1/2 teaspoon pepper

  • 1/2 tablespoon salt

  • 2 cups ketchup

  • 1/3 cup cider vinegar

  • 1 tablespoons liquid smoke flavoring

  • 1/4 cup Worcestershire sauce

  • 1/2 cup packed brown sugar – or use less sugar and molasses.

  • hot pepper sauce to taste

Using a saucepan, cook the onions and garlic in the beer until onions are translucent – about 10 minutes.

Add pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce.

Bring to a boil and simmer for 20 minutes minimum, then longer to reach desired consistency.

We used small half pint jars to keep them, but you could use anything. Since this was just a small batch we didn’t bother pressure canning these, we just kept them in the fridge.
